This is one of the multitudinous places in which the X resourses
can be set.  I myself prefer to put them in ~/.Xdefaults.
You'll want a line like:

xterm.font: your-favorite-font
XTerm.Font: your-favorite-font

or even:

*Font: your-favorite-font

This last one is pretty pervasive, though.
