Don't -- "dpkg" is what actually manages that data; the other tools read
from it.

I think all you need to do is adjust your "/etc/apt/sources.list",
perhaps "/etc/apt/preferences" (man apt_preferences), run "apt-get
update", and it will have done what you want here.
