[PLUG] Upgrading from Red Hat 7.3 to ...

You've nearly convinced me to go to Debian.  I tried to use 
http://packages.debian.org/ to check to see if the packages i need are 
available, but the site is still down due to that compromise last month. 
  So if you don't mind, I'll pick your brain.  These are the services I 
run (in priority order):

ssh (openSSH 3.1p1 right now, would really like to upgrade)
http (apache, including php and cgi. Would like to upgrade php to 4.3.x)
smtp (using sendmail now, but for no particular reason)
pop3 (using gnu-pop3d, also for no particular reason)

And a variety of user-level programs, including VNC and an ircd.

What are the versions of these things that are available in debian?  And 
which flavor of debian should I get?

Please don't hesitate to throw a couple of URLs at me if this is all 
explained well elsewhere.
