I have also enjoyed Everybody's Linux. I had it on my home workstation for about a year. It falls into the "easy" category. Their aim to convert Windoze users to Linux.  (Not a bad goal, if you ask me!) I found it to be nice and solid. They don't have the latest versions of everything -- sometimes a good thing. ;-)
