Any of the Charlie Papazian books.  Any member of the Oregon Brew Crew
that actually brews, rather than just appreciates, beer.  The counter
staff at any of the local home brew stores.  

It's really very simple.  As one professional brewer said, "People
have been brewing for thousands of years.  You may not get what you 
expect but you'll get beer."
