>From what I've seen driving around with kismet running, there is a
serious need for these skills (about half the networks I've stumbled
across are not even running WEP, just open to whoever wants in). 
Whether or not there is a market to justify the expense is debatable. 
Just because the need is there, doesn't mean there is work.
