[PLUG] emacs: changing face color

I've read pages 398-400 in the ORA Gnu Emacs book (2nd Ed.) and I cannot
change the text color in a buffer. According to the book, if I place the
cursor on that line and press Ctrl-button2 I can change the color.
However, all that does is drop the Edit/Fonts menu and that disappears as
soon as I let up the button or ctrl key.
Here's the environment: I'm adding references to my bibliographic database
(refDB), and it uses an emacs major-mode with syntax highlighting. Because
the emacs window background is black I find the dark red text very difficult
to read. The dark blue tags are not much better. What I want to do is change
the colors of those faces, but I cannot get emacs to do what it says it
will. Specifically, I place the cursor on the faces list for the one I want
to modify, and I click trackball button 2. Nothing happens.
What am I missing here?
