Keep in mind that in a journaling filesystem, only the filesystem metadata
(inode entries, data pointers, etc.) are journalled-- the actual data in
the files is not. (There may be some exeptions for very small changes,
depending on which journaling filesystem is in use.)
The Veritas filesystem has a snapshot mode that does what you describe for
both the data and the filesystem metadata, without regard for which LVM is
in use.
