SMTP:  Postfix
IMAP:  bincimap
WebMail:  SquirrelMail

Then toss SpamAssassin in there for spam filtering.  If you have any
Windows boxes at all that might be reading email from the server or
sending email through the server, I'd highly recommend installing
AMaViSd-new and configuring it to utilize SA and ClamAV.
