My money would be on a switch dying.

You can stack switches many many levels deep - the collision domains are
essentially irrelevant with switches (unlike hubs).

I've had switches and other cheapo network hardware dye with power
fluctuations... requiring a bounce.  Swap the things out, see if it
still happens.  Invest in a spare switch, perhaps.  Test the cable, of
course.

As Jeff mentioned, are you sure you have no network loops?  Cheapo
switches may not handle such things gracefully.
