Cat5 itself is a cabling spec.  Four pairs of Unshielded Twisted-Pair,
such-and-such impedence, crosstalk and capacitance for such-and-such
signal bandwidth.

100 Mbps ethernet (100Base-T) uses two of those four pairs.  You can
run 10Mbps (10Base-T) over two pairs of Cat3, which is your typical
phone-grade 4-pair UTP.
