Yes, usually all hard disk partitions with file systems show up on the
desktop. Also, if you have mucho RAM, you can type in "knoppix toram" at
the very beginning, letting you eject the CD and mount any other CD once
it copies the contents of the CD to RAM.

It doesn't make an excellent Windows recovery tool, as you have to
wrestle with captive-ntfs before you can modify files on Windows
partitions. (Read-only access is hassle-free, though.)
