Well ... here goes:

1. Windows server, Windows client: Microsoft's latest RDC.
2. Windows server, Linux client: either rdesktop or krdc. There are
others, but these two work best for me.
3. Linux server, insecure but free as in speech: all versions of vnc as
far as I can tell. This includes vnc, tightvnc and x11vnc. RealVNC is
the only free as in speech Windows client I'm aware of.
4. Linux server, secure but free as in beer: NX from NoMachines.com
5. Linux server, secure and free as in speech: freenx.

What do I use? Talking to a Windows box from Linux: rdesktop. krdc will
work as either a vnc or RDP client, but since I stopped running vnc
servers on my Linux boxes, I've gone back to rdesktop.

Talking to a Linux box from Windows: freenx server on the Linux box, the
free as in beer NxClient for Windows on the Windows box

Talking to a Linux box from Linux: freenx server as above, the free as
in beer NXClient for Linux on the client.

Why did I stop using VNC? I had some problems with both "vnc" and
"tightvnc". Some of the server apps were crashing looking for libraries
with the vnc server but ran fine on the server's desktop. And with the
tightvnc server, I couldn't get all the screen sizes right -- for some
reason I could only get 1024x768 and gave up trying to get past this.
