Have you looked at Mondo?  Once you figure out the commandline options,
it'll back everything up to a bootable set of DVDs that can restore your
machine from bare-metal.  It'll also do incremental backups.  I don't
know if it makes good use of dual-layer media, but I've found it very
useful in general.

Admittedly, I haven't tried a full restore, just (I think) file-by-file,
but it's pretty nifty.

Which reminds me, I gotta back up my home server...
