[PLUG] Gnome (CentOS 5) user menu/application

If that topic doesn't confuse you let me try harder.
I'm looking for the correct terms to use to search for HOWTOs etc. to
build my own Gnome desktop menus.
Back in the good-old-days when I used a simpler window manager I could
just edit a file a line ot two and when I right-clicked on the
background a sub menu showed up with these new items.
It now takes a small army of XML-ers and strong drink to add
something to the menu system. (See, I have done a little research.)
In a typical day I ssh into 3 to 20+ servers; each one from one to
I-don't-know how many times a day. This means opening a terminal,
Ctrl-R and type a part of the username or hostname (if I've gone there
recently) and then when I get the right one press enter.
I'm looking for a way to do what PuTTY does with it's aliased list of
systems, but a little more. I'd like to subdivided the hosts and
accounts into categories.
With a little Perl I could do it but if something to do this already
exists then let my laziness and impatience reign.
