[PLUG] Chess problem

I have the design for a page including a two chessboards mixed with text in .pdf format, a project which does not appear to involve copyright infringement. I was asked to extract it to text format (such as .odt), so that it would look similar to the .pdf. The text includes a figurine font that makes chess symbols. Can this be done with Linux, and if so what are the best applications to use?
