/etc/logwatch/conf/logwatch.conf

Service = "-sendmail"

and/or

Service = "-postfix"

is what I use depending on whether the system is running sendmail or 
postfix.  I've seen on a few systems that were moved from sendmail to 
postfix that it required both.  Too lazy to go find where the default of 
doing sendmail is set.  :-)
