There was/is a project (Knoppix / Debian based) called FreeDuc. They
produced two live CDs, the first of which was aimed at middle school --
high school students, and the second of which was aimed at elementary
school students. I downloaded the elementary one a few days ago. It
comes up with a European keymapping and there's no easy way to override
that without doing a Knoppix remaster. It does boot, however, at which
point you have an XFCE desktop with all the menus in French.

The one for older students is a bit more usable, although dated. I
checked out Edubuntu, but it is no longer distributed as a single
LiveCD. You have to install a Ubuntu desktop and then an Edubuntu
add-on. openSUSE also has an education add-on; they either just released
it or are in the final release candidate stage of it.

And, of course, there is the collection of software on the OLPC XO,
which is Fedora-based. In short, there is no shortage of open source
educational software.
