On Ubuntu and Slackware systems, so maybe on many others, too, if you 
have a directory named Templates in your home directory, you can put an 
otherwise empty file in there with your preferences set. I know it works 
for .doc, .docx, .xls, and .xlsx. Might work for other things, too, but 
I don't have anything else in mine.

Set up a spreadsheet with your preferred settings and put it in there. 
In LibreOfficeCalc, in the bottom right corner of the window, there is a 
number displayed as a percent. Mine is 115%. That enlarges everything 
visually, but doesn't change the stored font size. For 
LibreOfficeWriter, I have 120%. Those settings make seeing what's in the 
spreadsheet or Writer document much easier for me. In both tools, what 
is changed is found in the menu View > Zoom setting. Maybe that will 
help make it easier to read.
