The trick there is to think of where the "average brightness" is going
to be relative to the interesting parts of your image.  If it's above,
dial a +1 EV.  If it's below, dial a -1 EV.

So for snow and beach pictures, usually a +1 EV is suggested.  Of
course, if you have time, you can play and review to see.

I'm often shooting inside without flash, so one of my presets is at -1
EV to make sure my interesting images don't get blown out over the
top of the exposure.
