[PLUG-TALK] Freezing sauerkraut

   A few months ago we had a brief thread on sauerkraut and John asked me to
report how well it freezes, so I am reporting. Works like a charm.

   Three weeks ago I filled 3 quart Ball canning jars with sauerkraut (1/4"
head space) and put them in the freezer. This morning, having run out of
'kraut in the fridge, I moved a jar from the freezer to the fridge.

   Just tried it and it tastes just like the fresh-made 'kraut. Reminds me of
the warm 'kraut that the push-cart hot dog vendors in NYC used to provide.

   Now I'll try it with pickled cukes and see if they stay crunchy. If anyone
wants a simple recipe for half-sour dill pickles I'll post it.
