One of the measurement areas most resistant to change is cooking and baking.
The use of volumes (teaspoons, cups, gallons) instead of weights (kg) is
still dominant. This is not an issue with foods such as braises and roasts,
but is very important when baking breads, making sausages, and fermenting
(sauerkraut, pickles, yogurt). I am trying to find out (just out of
curiosity) whether culinary schools have changed to metric measurements.

And when I worked for a water management district in Florida we used to
speak of productivity in memos per month and furlongs per fortnight.
