Have you looked at the LPI or RHEL study guidelines?
Practically speaking, "experienced practitioners" don't get fancy. If you
can cover basic port-blocking/opening, forward-dynamic and reverse-static
NAT, you'll have well-educated students. If they get a little experience
with the Red Hat and UFW config files, all the better.
Combine with IP Route, and you're great.
You might find interesting things in the LARTC or the NAT HOWTO.
