Why when I hit Reply am I getting:

As the TO but the list header itself shows:

Interesting. Mail sent to plug at lists.pdxlinux.org goes to the spiretech.net SMTP server [69.168.62.104] and reaches me. But the message that arrives sets the return address to plug at pdxlinux.org (no "lists." in the domain part of the address). Mail sent to that address goes to the tidalhosting.net SMTP server [155.130.138.8] and disappears into some as-yet unspooled queue.
